Slow Cooker Whole Chicken Recipes Cacciatore

Chicken cacciatore is a gorgeous Italian dish that uses a rustic tomato sauce to enhance the flavour - and this recipe is Cookery Editor Emma Franklin's favourite.

"I mostly use my slow cooker for big batches of meaty things like Bolognese or chilli, or – in the summer – these melt-in-the-mouth bbq ribs – but this recipe is a bit different. The tangy tomato sauce with a salty boost from anchovies and the tender chicken (cooked on the bone to keep it juicy) make a fabulous midweek meal, which I love to serve with lots of crusty bread for mopping up the sauce."

Tip: Crisp up the chicken skin by dredging in flour and frying before adding to the slow cooker.

500 g

bone in and skin on chicken thighs

50 g

plain flour

1

onion, finely chopped

150 ml

red wine

2

peppers, cut into strips

3

garlic cloves, crushed

2

bay leaves

2

sprigs of rosemary, needles finely chopped

5

anchovies, optional

200 ml

chicken stock

1

x 400g tin plum tomatoes

100 g

pitted olives

  1. Heat half the oil in a large frying pan. Dredge the chicken in the plain flour and then add to the frying pan, skin side down. Brown both sides until golden then remove to a plate, skin side up.
  2. Wipe out the frying pan and add the remaining oil with the onion. Cook until beginning to soften, around 5min. Turn up the heat and add the wine. Cook for a few minutes until reduced by half. Stir in peppers, garlic, herbs and anchovies, if using. Cook for another 2min until the anchovies start to melt. Pour in the chicken stock and plum tomatoes. Bring to a gentle boil.
  3. Pour the mixture into the slow cooker and nestle the chicken thighs on top. Cook on high for 3hours.
  4. Stir in the olives and season to taste. Remove the chicken thighs to a plate and tip the liquid into a wide shallow pan. Reduce over a high heat for 5-10mins if a thicker sauce is desired. Serve with rice or polenta.
